Decadent Hot Chocolate

A rich, velvety homemade hot chocolate made by blooming cocoa powder, dark chocolate, and brown sugar on the stovetop.

Ingredients
  

  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon brown sugar
  • 1/2 cup whole milk
  • a pinch of salt
  • 1/4 cup finely chopped dark chocolate (60-70% cacao)
  • 1/2 teaspoon vanilla extract
  • whipped cream, shaved chocolate, and a Cadbury Flake (optional topping)

Method
 

  1. In a small saucepan, combine the cocoa powder and brown sugar. Add about 2 tablespoons of the milk and whisk vigorously until a thick, smooth, glossy paste forms. This "blooms" the cocoa.
  2. Place the saucepan over low heat and gradually pour in the remaining milk, whisking continuously until the mixture is smooth and steaming hot (do not boil).
  3. Stir in the salt and the finely chopped dark chocolate until the chocolate is completely melted and the mixture is smooth and velvety.
  4. Turn off the heat and stir in the vanilla extract.
  5. Pour the hot chocolate into a mug. Top generously with whipped cream and optionally garnish with shaved chocolate or a Cadbury Flake. Serve immediately.

Notes

For an even richer result, substitute a tablespoon or two of the milk with heavy cream.
