Method
- In a small saucepan, combine the cocoa powder and brown sugar. Add about 2 tablespoons of the milk and whisk vigorously until a thick, smooth, glossy paste forms. This "blooms" the cocoa.
- Place the saucepan over low heat and gradually pour in the remaining milk, whisking continuously until the mixture is smooth and steaming hot (do not boil).
- Stir in the salt and the finely chopped dark chocolate until the chocolate is completely melted and the mixture is smooth and velvety.
- Turn off the heat and stir in the vanilla extract.
- Pour the hot chocolate into a mug. Top generously with whipped cream and optionally garnish with shaved chocolate or a Cadbury Flake. Serve immediately.
Notes
For an even richer result, substitute a tablespoon or two of the milk with heavy cream.
