Cranberry Vanilla Swirl

A festive and visually stunning mocktail layering tart cranberry juice with rich vanilla cream and a sweet swirl of grenadine.

Ingredients
  

  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons icing sugar (optional)
  • 3/4 cup cranberry juice chilled
  • 1 teaspoon grenadine syrup
  • ice cubes
  • fresh cranberries and a sprig of rosemary (garnish, optional)

Method
 

  1. In a jug, combine the cold heavy cream, vanilla extract, and optional icing sugar. Use a hand frother or small whisk to thicken the mixture slightly until it holds soft peaks.
  2. Fill a tall glass with ice cubes. Pour in half of the chilled cranberry juice.
  3. Gently pour the vanilla cream mixture over the juice and ice.
  4. Add the grenadine syrup on top of the cream layer. Using a cocktail stick or toothpick, gently swirl the grenadine into the cream to create a marbled effect.
  5. Top the glass with the remaining cranberry juice.
  6. Garnish with a few fresh cranberries and a sprig of rosemary before serving.

Notes

Ensure the heavy cream is very cold to achieve the best thickness.
